Description:
It is made from Garnacha and Tempranillo grape varieties. Control begins at harvest time, when technological ripeness is sought so that there is no excessive concentration of anthocyanins in the grape skin and we can obtain a delicate rosé colour. On the palate, we obtain a must with more acidity and freshness. Each variety is treated separately, with short macerations (2-3 hours), very gentle pressing and static clarification to obtain a very pure must. Fermentation takes place at a very low temperature, as with quality white wines, around 12-14ºC, and remains on the lees for 3-4 months before being blended and bottled. Food pairing Suitable for all types of starters, fish and seafood, as well as oriental dishes.
